Puff Pastry Pizza

I love pizza! I am going to assume that so many others share my passion for the cheesy, saucy, crusty flat pie. Good pizza is not an immediate occurrence, it takes some time to perfect a simple recipe. 

I spend half of my time learning new ways to make new things and the other half praising those who have done it right. Have I professed my love for the Pioneer Woman this week? Well, I absolutely love her rustic take on just about everything. I first saw a recipe for puff pastry pizza on Tastemade, then like fate my favorite cook also had a version. Score one for the foodie in me!

I took both recipes and put my own twist on it. I didn't change much, but it is always nice to know a recipe has no flaws and endless possibilities. Here is what I came up with.....

Ingredients

1 sheet of puff pastry (thaw at room temperature)

2 tablespoons of pesto

1 cup of tomato sauce

fresh basil leaves

1 cup of mozzarella cheese

 

Directions

1. Preheat oven to 400 degrees. 

2. Cut puff pastry sheet down the middle to create two pizzas and prick with a fork all over to stop rising.

3. Spread 1 tablespoon of pesto over puff pastry in thin even layer. 

4. Bake puff pastry on a parchment paper lined sheet pan for 12 minutes then remove from oven and allow to cool for 5 minutes.

5. Spread on a layer of tomato sauce and mozzarella cheese. Then bake until cheese is melted and edges are golden brown.

6. Top with chopped basil and serve!

 

Tips and Combinations

Your choice of pizza toppings is endless. Some of my favorites include the classic pepperoni (use mini ones), the Hawaiian (slice ham and pineapples), bacon and eggs (instead of tomato sauce use cream cheese). 

The puff pastry crust is a mix of flaky and chewy, which is able to please any rabid pizza lover. Make this one with the kids, everyone can personalize their little slice of heaven. I hope you enjoy making this one.
