Chicken Three Ways: Meal Prep Recipe

I do not enjoy meal prep. I find it very boring to plan out meals too far in advance. Three days is the right amount of time for prepping meals. So, I thought of three different variations that start the same way. 

Ingredients

The Classic

1 chicken breast

1/2 teaspoon of salt

1/2 teaspoon of pepper

1/2 teaspoon of onion powder

1/2 teaspoon garlic powder

1 teaspoon of smoked paprika

 

 

Fajita Style

1 chicken breast cut into strips

1/3 of a bell pepper cut into strips

1/3 of an onion cut into strips

-Seasoning Mix

2 teaspoons of chili powder

1 teaspoon of paprika

1 teaspoon of sugar

1/2 teaspoon of onion powder

1/2 teaspoon of garlic powder

1 teaspoon of cayenne powder

1/4 teaspoon of cumin

1 teaspoon of salt

1 cup of water

 

Quick Chicken Pasta

1 chicken breast cut into chunks

1 15oz can of tomato sauce/ diced tomatoes

1 teaspoon of garlic powder

1 teaspoon of onion powder

1 teaspoon of Italian seasoning

1 teaspoon of oregano

1/2 teaspoon of salt

1/2 teaspoon of pepper

2 cup of pasta

1 cup of water

 

Directions

For The Classic:

1. Start by seasoning each side of the chicken breast.  

2. Place the chicken breast in between two sheets of parchment paper. Use a mallet or the bottom of a heavy pot to pound it until it doubles in size and flattens to 1/3 of an inch. 

3. Sautee the chicken in a pan with a tablespoon of oil for 2-3 mins per side only flipping it once. 

4. Cut into strips and enjoy!

For Fajita Style:

1. Cut chicken breast into strips and season with spices. 

2. Sautee the onions and peppers in a pan with a tablespoon of oil for 2-3 mins before adding in the chicken. 

3. Once the chicken starts to brown around the edges add the cup of water to the pan.

4. Simmer on low until most of the water has evaporated. 

5. Stuff the finished dish in soft tacos or put it over rice. Enjoy!

For Quick Chicken Pasta:

1. Sautee the chicken with a tablespoon of oil in a pot for 2-3 mins over medium heat.

2. Pour in the can of tomato sauce and water.

3. Stir in seasonings and pasta. Turn heat down to low and simmer until pasta is tender. 

4. Top with grated parmesan cheese. Enjoy. 

 

Tips and Combination

The great thing about these three chicken dishes is that can all be made in the same pan one after the other the same night. I frequently make all three in one night filling up my meal prep quota for the week. 

For the Classic Chicken don't hesitate to put it on a salad or just in between two slices of bread. The Quick Pasta works even better when you through in your favorite veggies, but for veggies with high water content reduce the water by 1/4 to keep your sauce thick in the end.
