Apple Tart: Inspired by TPW

Have I told you all about my love of Ree Drummond a.k.a The Pioneer Woman! Well, I have to give her some of the credit if not all of it for this recipe. I saw her make a recipe very similar to what I came up with. I had to put my own little spin on it of course. Here is what I came up with!

Ingredients

4-6 medium sized apples (granny smith, gala, whatever apple is on sale that week)

1 puff pastry sheet

Juice of 1 lemon

1/2 cup of brown sugar

1/2 cup of caramel sauce

1/2 of chopped pecans

1/2 8oz block of cream cheese

Optional: 1/2 cup of strawberry jam, jelly, preserves, etc.

 

Directions

1. Remove the core of each apple before slicing thinly.

2. In a large bowl combine apples, brown sugar, and lemon juice. Allow the mixture to set for about 10 mins. 

3. Prepare the thawed puff pastry by cutting it down the middle to make two pieces. 

Optional Step: Pre-bake the puff pastry for 4 minutes at 375 degrees on a non-stick baking sheet for a crispier crust before topping.

4. Spread a thin layer of softened cream cheese over each puff pastry leaving about 1/3 of an inch on all sides uncovered. 

5. Place apples in a row overlapping until the cream cheese is completely covered. *Shake off any excess juice from the apples to prevent a soggy crust. 

6. Bake at 450 degrees or until the crust is golden brown. 

7. Top with warm caramel sauce (homemade version works, if you are up to the task) and top with chopped pecans. 

8. Slice and Enjoy!

 

Tips and Combinations

If apples are not your thing you can use a variety of fruits such as peaches, nectarines, plums, and even pears. 

Depending on what type of fruit you decide to use, it may be beneficial to ditch the cream cheese and add just a layer of jam instead. Try using a smooth strawberry jam and pair it with tart granny smith apple slices for a tangy tart alteration.
