Charred Corn Guacamole

Ingredients

2 ripe avocados

1 cup of frozen or fresh corn

1 tablespoon of butter/olive oil

1/4 cup of red onion

1/4 cup of green onion

1 clove of garlic

2 tablespoons of lemon juice

1/4 teaspoon of black pepper

Salt to taste

 

Directions

1. In a pan over medium heat melt the butter and toss in the corn. Cook the corn until it becomes charred and crisp. 

2. Mix together the avocados, onions, garlic, lemon juice, and pepper. Stir in cooled corn.

3. Refrigerate or serve immediately.

4. EAT!

Tips and Combinations

A straight forward take on guacamole. I think you can come up with alterations on your own. Add in cilantro if that is your thing. I hate the stuff! Go make this now for your next office party!
