Non-Traditional Guacamole

Before everyone starts to throw rocks or burn down my web site hear me out. I am clearly calling this a non-traditional guacamole. This one is up for interpretation. I love a chunky guac! I really don't believe in a super smooth version. If I wanted my avocado smooth I'd make an avocado cream. 

Look! I will not be judged for my dislike of cilantro either. And yes, I put tomatoes in it.

Wow, this post has taken a defensive turn. Here is the very best non-traditional, slightly traditional recipe for an amazing guacamole. 

 

 

Ingredients

4 ripe avocados (medium-sized)

1 Roma tomato

1 serrano pepper

1/3 cup of a red onion 

1 tablespoon of a lime (about half a lime)

*salt to taste

Directions

1. Remove seeds and chop the tomato. Mince the red onion and serrano pepper removing the top and half the seeds (all the spice is in the seeds). 

2. Cut open each avocado by slicing them lengthwise until you reach the pit. Give the fruit a twist and pull the two halves apart. Place the half with the pit on a cutting board and give it a whack with the base of a knife. Twist and pull up to remove pit. Peel away the skin! 

3. Mix mashed avocados, tomatoes, onion, serrano pepper, and lime juice in a large bowl. Sprinkle with salt to taste. 

4. Cover with plastic wrap and chill for an hour in the fridge. 

5. Grab chips and Eat!

 

Tips and Combinations

You can leave out the tomato. You can add in cilantro. You can use jalapeno peppers. Sorry, not sorry Folks.

I love a chunky guacamole. In order for it to stay chunky mix in the avocados last! You can go traditional or Chipotle-esque with just avocado, onion, cilantro, and salt. Boring! Go crazy and add anything you want to your guacamole. I've done a version with roasted corn!

Spread it over toast, put a big dollop on eggs, burritos, etc. I could sit here all day writing down suggestions, but I have a life beyond this recipe. So, get mashing!
