Granny-Smith Apple Chicken

Is your chicken bland? Is it dry? Do people leave the table before finishing their plate? Well, look no further than the recipe below. Here is how I made the best roasted chicken of my life.....my short life. 

 

 

 

Ingredients

1 - 4 to 5-pound chicken

3 small granny smith apples

1/2 a large onion

8 cloves of garlic

2 tablespoons of salt

2 tablespoons of pepper

1 tablespoon of thyme

2 wooden chopsticks (optional)

*Please wash hands and surfaces with warm soapy water when handling chicken to prevent any chances of cross-contamination. 

 

Directions

1. Cut apples into bite-sized pieces, rough chop onion and mince garlic. Mix apples, onion, garlic, thyme, and one tablespoon of salt and pepper in a large bowl. 

2. Remove the innards of the chicken and pat the skin dry with a paper towel. 

3. Season the outside of the chicken with the remaining salt and pepper. 

4. Stuff apple/onion mixture into the cavity of the chicken. Use chopsticks to pierce the skin over the opening, crossing the two to create a seal to keep the mixture from falling out during cooking.

5. Bake at 350 degrees for about two hours or until the skin is golden brown and the juices run clear from the inner thigh. 

6. Let the chicken rest for 15 minutes covered with foil before cutting. 

7. Slice and Eat!

 

Tips and Combinations

You could stuff this chicken with a red apple to ramp up the sweetness. I chose granny smith apples for tartness. This apple pairs well with savory dishes. I use them when making sauces for pork chops instead of the traditional pear. 

I went light on the thyme because although I love the flavor it gives to chicken, it can also overpower the other spices used when cooking. I enjoy a hint of thyme, but you are free to add it to the outside of the chicken as well. 

If whole chickens are not on sale that week, go with leg quarters and create a bed of the apple/onion mixture to bake the chicken over in the pan.
