Dill Salmon Wrap with Grilled Lemon

You have had a hard day.... 

You are too tired to make anything fancy....

WRONG!

If you can obtain the energy needed to cut on the stove then you can impress your inner self. This one is really 3......4....ingredients..... Are we considering the wrap an ingredient? Moving on...

Turn on your favorite playlist, pour yourself a glass of sparkling grape juice and prepare this simple fancy wrap!

Ingredients

Wild caught salmon (farm-raised won't kill you either)

Dill (fresh is best)

salt

pepper

smoked paprika

lemon

lettuce

balsamic vinegar

tortillas

Directions

1. Season your salmon with salt, pepper, and dill. Pan sear it skin side down until it turns opaque. Remove the salmon from the pan and let it rest.

2. Slice your lemon into thin circles. If you have a mandolin, it works perfectly. Depending on how much you like lemon feel free to slice it thinner! Sprinkle your slices with paprika and salt. 

3. Use a grill pan....or a regular pan.....or George Foreman Grill......no product placement intended, to grill up your lemon slices. After achieving deep grill or char marks on either side of the slices remove them from the grill. *In case you are not a fan of lemon use any firm stone fruit. 

4. Assemble your wrap! Start with a bed of lettuce, put down a layer of your grilled lemon, add some tomato if you're feeling lucky (optional), heap on the salmon, give it another sprinkle of dill and drizzle some balsamic vinegar (NUCO coconut vinegar balsamic style works) on top.

5. Roll it up and grab it with both hands! Enjoy.

 

Tips and Combinations

This wrap actually inspired me to grill up more fruit. You could throw some mangoes and peaches on the grill, chop it up with some bell pepper, red onion, cilantro (I am one of the few people who hates this green herb with a passion, substitute with parsley), jalapeno, lime, and a bit of salt to make a salsa.

Try this recipe with other types of fish and shrimp! We all know chicken loves lemon and herb, so that would be an option. 

Always remember that even when you don't feel like cooking something fancy...........well I am sure there is a profound statement somewhere in my mind, but I can't remember it. 

COOK. EAT. REPEAT.
