Heirloom Tomato Frittata
I love heirloom tomatoes! I wanted to make them the star of this breakfast. It actually made me think about how I've neglected my local farmer's markets. It is only recently that a good selection of heirloom tomatoes made it into some new recipes.
After you make this one it will surely make its way onto your weekly menu. Here is how I did it!
Ingredients
1 cup of sliced heirloom tomatoes (choose a variety of colors)
1/2 cup of chopped ham
1/2 of cup sliced mushrooms
1/2 of shredded cheddar cheese
2 large eggs
2 stalks of green onion
1 teaspoon of salt
1 teaspoon pepper
1 tablespoon of olive oil
Directions
1. Slice the tomatoes, ham, and mushrooms into bite-sized pieces.
2. Using a fork mix together the eggs, sliced greens onions, salt, and pepper in a bowl.
3. Heat a small pan over medium heat then add the olive oil.
4. Saute the tomatoes, ham, and mushrooms for 2-3 minutes.
5. Pour egg mixture into pan over tomatoes, ham, and mushrooms then remove it from the heat.
6. Sprinkle cheese over the top then put the pan under the broiler on low until the egg is set for about 2-3 minutes
7. Flip the frittata out onto your plate and garnish with more green onions and cheese.
Tips and Combinations
Eggs, meat, and cheese, the possibilities are endless. This one even works without the meat, just add in another one of your favorite veggies. I have done it with chunks of zucchini and squash.
If you want something creamy over the top when serving try a dollop of guacamole or salsa to spice things up.
