Cherry Pear Salad

Are you under the impression that breakfast is only the standard bacon and eggs or oatmeal? Well wake up grandpa, it is 2016, food has no meal time assignments. I really want to inspire the foodie within you to fly free. Try this simple salad to get your day started then tell me if your bias has changed....

Ingredients

Kale

Fresh Cherries

Pear

Pecans

-Vinaigrette

Lime Juice

Extra Virgin Olive Oil

Salt

Pepper

 

Directions

1. Chop the kale into bite sized pieces, add a tablespoon of olive oil and massage with hands in a large bowl to soften the otherwise tough green. 

2. Cut cherries in half, dice pear, add to kale. 

3. In a small bowl whisk together 60% oil, 30% acid (lime juice), and 10% flavoring (salt and pepper) to make the vinaigrette. 

4. Toss salad with vinaigrette and top with toasted pecans or almonds.  

 

Tips and Combinations

To create any simple vinaigrette remember the 60/30/10 rule. I learned it from.....one of my favorite Snapchats. I can't seem to remember which one, but it is a universal rule anyway. I have a go-to vinaigrette, it is olive oil, lemon juice, spicy brown mustard, and a  little S & P to taste. I love a sweet salad with a savory dressing. 

For some extra kick, add in some thick crispy salty bacon. Salads are so versatile! You cannot go wrong with your favorite greens topped with crisp veggies and tossed in a light flavorful dressing. What is your guilty pleasure salad? Leave it in the comments below.
