Stuffed French Toast
This was my very first time making this lovely take on the traditional french toast recipe. I hope you find it as easy and tasty as I did. Enjoy.
Ingredients (makes 6-7 slices)
1 large loaf of french bread (multi-grain)
1 cup of strawberries (small dice)
1 firm banana
1/2 (8 ounce) package of cream cheese
1 teaspoon of lemon juice (optional)
2 tablespoons of butter
2 tablespoons of powdered sugar
Egg Mixture
3 Medium Eggs
1 cup of milk
1 tablespoon of sugar
1 teaspoon of cinnamon
1 dash of nutmeg
1 pinch of salt
Directions
1. Using a serrated knife cut the bread into one-inch slices. With the tip of the knife cut a slit half way down the center of each slice. The downward motion will create a pocket for the filling.
2. Mix the cream cheese, diced strawberries, and lemon juice together in a bowl until smooth. Return mixture to fridge until ready to stuff bread. Add in a spoonful of honey for extra sweetness (optional).
3. In a large bowl, whisk eggs, milk, cinnamon, sugar, nutmeg, and salt until well combined. Set mixture aside for dipping.
4. Cut the banana into thin slices and stuff one layer into the bottom of the open bread pocket.
5. Remove the cream cheese mixture from the fridge and fill it into the remaining space of each slice.
6. Over medium to low heat, melt 1 tablespoon of butter in a large non-stick pan.
7. Once the butter is melted, begin to dip each slice of bread into the egg mixture. Use a two count for dipping each side.
8. Lay each slice into the pan and cook until sides are a deep golden brown.
9. Top finished french toast with powdered sugar, extra fruit, and maple syrup.
Tips and Combinations
If you are afraid the filling will spill out during the cooking process try layering the french toast the old fashioned way on the plate. Put down a slice of french toast, spread on the cream cheese mixture, and top with another slice.
