Secret Chicken Salad

One of my closest friends has been hounding me for the recipe to my chicken salad for years. I have decided to give up the secret but on one condition. You cannot tell anyone else....except for your closest friend....and the people who you can share this post with around the internet. But no one else....only real friends. #nonewfriends

The truth is that there is no secret. I use simple ingredients and no bullshit. Here is the recipe that we've all been waiting for.....

 

 

 

Ingredients

2 large baked chicken breast (two recipes to help, Roasted Chicken or GS Apple Chicken)

2  cups of seedless red grapes

1/2 cup of red onion

1 teaspoon of black pepper

1 cup of mayo

2 tablespoons of dijon/spicy mustard

 

Directions

1. Remove the skin from chicken and place on a microwave-safe plate. On 30-second intervals microwave the skin until it becomes crisp and rigid. Remove from microwave and allow to cool. 

2. Cut the chicken into bite-sized pieces, mince the onion, and slice each grape in half. 

3. In a large bowl mix mayo, mustard, and pepper together. Toss in chicken, grapes, and red onion. 

4. Chop the chicken skin and fold into the mixture until well combined.

5. Cover with plastic wrap and chill in the fridge for one hour.

6. Grab crackers and Eat!

 

Tips and Combinations

There are so many things that you can add to this chicken salad. For the purposes of this recipe, I kept it simple. If you don't feel like cooking your chicken pick up a ready-to-eat one from the deli section of your local grocery store. I won't fault you!

Now let's talk about some ideas to make it your own chicken salad. You can add in nuts or celery for more crunch. I've even done it with crispy bacon and chunks of cheese. You can go fresh and fruity with green apple and cranberries also. The possibilities are endless! If you like it, I love it.

I think that because this recipe is so simple and it tastes so good that people find it hard to believe that it is really only a few ingredients.
