Orange-Honey Glazed Carrots

Last week should have been called Side Dish Mania because I made some great ones! Sometimes the side evolves into the star of the plate. I made these carrots and fell in love all over again. Here is how I did it.

Ingredients

3 large carrots chopped (about 2 cups)

1 medium orange

1/4 cup of honey

3 tablespoons of oil

1 cup of water or vegetable stock

 

Directions

1. In a non-stick pan over medium heat, add in the oil and carrots. Cook until carrots begin to soften on edges. 

2. Add water to pan. Cook until carrots are tender or water has evaporated. 

3. Pour in the juice of one orange and honey.

4. Coat carrots in the orange-honey sauce. Salt and pepper to taste.

 

Tips and Combinations

I work with kids at my job on most days and last week I saw something so surprising. Kids love carrots! Maybe the bright orange color is intoxicating to the little ones. It got me thinking about new ways to get veggies into my own diet. If you are preparing this one for your kids skip the honey and add the juice of another orange. Carrots already have a sweet taste, so you won't miss the honey one bit!

For your next meal make the veggies the center of attention. Ditch the meats all together for some protein-packed greens.....beans.....or mushrooms! I try to incorporate Vegan Fridays into my life as much as possible. All your meals from breakfast to dinner or completely vegan, with bonus points for making your favorites veggie style.
