Mango Basil Salad

A light side salad that is bursting with flavor! Here is how I made it....

 

Ingredients

2 cups of cubed mango

2 cups of cubed watermelon

1/4 cup of chopped Thai Basil

1/4 cup of lemon juice

1 teaspoon of salt

(Optional: 1/2 teaspoon of Tajin seasoning)

 

 

 

Directions

1. Mix together the mango, watermelon, and lemon juice in a bowl. Let it sit for 10 minutes to marry the flavors.

2. Toss the fruit mixture with the Thai basil and salt. 

3. Chill or eat immediately. Store in the fridge up to 2 days.

 

Tips and Combinations

This salad is the perfect pair to my Spicy Salmon. I bake a generous cut of salmon using a sauce made of olive oil, balsamic vinegar, Korean chili sauce, salt, and lemon. Once the salmon is almost done put it under the broiler to caramelize the top.
