Quickie #3

Today was all about the Breakfast Burrito! I took the common breakfast omelet ingredients (eggs, mushrooms, sausage, cheese, and tomatoes....whatever you like is great!) and added a little flare by putting it inside a tortilla. 

Okay, so I basically just made breakfast hand held.  I'm always on the go so this helps and are great prepared ahead of time and popped in the microwave.

I couldn't help but include my favorite items, salsa and avocado! 

I cooked the eggs and veggies in a pan over low heat until they were almost done.  

Took it off the heat while I cooked my sausage (chop it up after for an easier fit inside the tortilla). Then I added all the ingredients into the tortilla with cheese, avocado, and a spoon full of salsa on one side of the tortilla. I rolled it over and tucked once tightly, pulled in the side and rolled until it was closed. In a pan I added a tablespoon of oil over low heat. I put the burrito in seem side down and browned them on each side for about a minute. 

Now you are done!
