Quickie #2

Last night, I was not in the mood for cooking a big meal. Naturally, I reached for the two items I always have on hand. Pasta and Sauce. Here is the end result with recipe, if you can call it that, below.

Danny's Fast Pasta 

Ingredients: 

1 cup of pasta (I prefer a veggie pasta)

3/4 a cup of pasta sauce (something veggie heavy like mushroom)

1/2 a small onion (optional)

1 Teaspoon of salt, pepper and garlic

1 Tablespoon of olive oil  

Directions: Broil pasta with directions on box. This isn't rocket science kids. Drain pasta and set it aside. I like to under-cook the pasta for this dish. Saute the onions and olive oil in a pan until slightly brown and translucent over medium heat. Next, add in the pasta, sauce, and seasonings into the pan. This is the time to add in all your extra fresh veggies like spinach and broccoli. Stir all the ingredients for about a 30 seconds and you are done! Told you it was that easy. 

 

Now for that pesto cheesy bread on the side. Which shouldn't be put in the oven until after the pasta is drained. 

Ingredients: 

2 slices of multi-grain bread (something hearty)

2 Tablespoons of pesto (make it yourself if you have the time, I do not)

1 slice of a thick wide cheese (I used a Munster)  

Directions:  

First, turn the oven on broil and let it heat up. Then cut the edges off of the bread. You can use the edges for croutons so don't throw them out. Place the slice and pieces onto a baking sheet in one layer. Spread half a tablespoon of pesto onto each slice of bread. Place half the slice or whole slice if the bread is large onto the pesto. Then spread the remaining pesto over the cheese. Place the finished product into the over for about 5 minutes or until you see the cheese start to melt. Take it out the put it under the broiler for a few seconds. Watch it closely the cheese will sizzle quick. Take it out when you feel the sizzle is just right. This is not the time to walk away. I'd suggest even keeping the door open so you can hear the cheese sizzle. Now you are done! You can add or take away from any step, what is life without a little customization.
